Benachin Or Jollof Rice From Senegambia (Gambia-Senegal)

ingredient 

  1. 2 lb Fresh fish
  2. 2 cup Vegetable oil
  3. 6 cup Water
  4. 1 medium Fresh tomato
  5. 2 large Onions
  6. 1 small Cabbage
  7. 2 medium Carrots
  8. 2 Bay leaves
  9. 4 cup Of rice
  10. Berbere or pili pili spice

instructions 

preheat a large skillet add oil. Cut fish in halves. Fry the fish in the vegetable oil until both sides are golden brown. Remove fish and set aside. Add onions, fresh tomato and tomato paste to the hot oil and fry until browned. Add water and bring to a boil, then include cabbage, carrots, bay leaf, add Thirteen Spice mix of your choice. Reduce heat and simmer for 20 mins. Remove vegetables with a slotted spoon and set aside with the fish. Add the rice while continuously stirring. It is important to first cook the fish and vegetables so that your rice picks up the flavours of what you have cooked in your pan. Once rice is cooked (approx. 30-40 mins) add veggies back to the rice, stir and serve with the fish.
