Chef Simons Mango Lassie

COCONUT MANGO MILK SHAKE WITH LIME & PILI PILI (serves 2)
 
INGREDIENTS
2 cups frozen ripe mango
1/2 – 1 cup coconut milk 
Water as needed
1 Tbsp lime juice (plus more to taste)
1/4 cup unsweetened shredded coconut
1 tsp pili pili
STEPS
  1. Add mango, coconut milk (start with a smaller amount of coconut milk and work your way up as needed) and lime juice to a high-speed blender or food processor. Blend on high until creamy and smooth, scraping down sides as needed. If too thick add small amounts of water to achieve desired thickness.
  2. Lightly toast shredded coconut in a pan over medium heat until it starts to brown slightly. While still hot, toss coconut with pili pili spice.
  3. Serve as is, sprinkle pili pili coconut on top. Enjoy!!
