Recipe's story
This recipe is one that I used to frequently make when I was trying to lose weight. It helped me lose weight, be healthy while still being able to eat things I liked. I used to hate vegetables and now I love them. I’m sharing this recipe in hopes of inspiring people that are like me to try out vegetables in a new way. I used Berbere spice because it a nice balance between spicy and richness, but if you like something more mild Xawaash is great as well.

Ingredients

1 onion (cut into strips)

1 bell pepper (cut into strips)

½ garlic (cut into strips)

1 tsp of Berbere spice

1 tsp of ground pepper

1 cup of frozen corns frozen carrots

10 tbsps. of olive oil

1 chicken breast
-
6 broccolis
-
6 shrimps
-
½ cup of mushrooms
-
2 eggs
-
Rice
-
Salt
-
Parsley
-
Water
Instructions

Gather the rice, water. Combine 2 cups of rice with 1 ½ to 2 cups of liquid. Turn the rice cooker on and let it cook according to the instructions.

Meanwhile cut the chicken breast, onion, and bell pepper into small pieces using a knife and a cutting board.

Put the already cut chicken breasts, bell pepper, and onions into a stove. Pour 5 tbsps. of olive oil and mix everything.

Add 1 tsp of ground pepper, 1 tsp of Berber spice, ½ garlic and bell pepper to the mix, a pinch of salt and continue mixing.

Mix it for a few minutes and continue by adding 6 shrimps, ½ of a cup of mushrooms, and some parsley. Once you’re done with that, mix. everything and let it cook for a few minutes.

Add 1 cup of frozen corns and carrots to the mix with 2 eggs and continue mixing everything together while adding the remaining 5 tbsps. of olive oil.

Continue cooking the whole thing for about 25 minutes and when it’s almost done add 6 broccolis to the mix.

Make sure the chicken breasts, shrimps, and eggs have finished cooking

Your rice should be done cooking by now, you can now enjoy your food!

Serving Suggestions
Divide the food into 3 equal parts. Take each part and put it on the side of a plate. Bring in the rice and put it on the other side of the plate. You can now enjoy your food!
