Vegetable Sauce with Rice and Fish


2 small eggplant 

1 can diced tomatoes 

3 cloves garlic chopped 

2 onion diced 

1 lemon juice

1 1/2 red or green pepper 

6 tilapia fish 

salt for taste 

instructions for fish 

Combine lemon juice, 1/2 teaspoon salt, 1 teaspoon pili pili, 1/2 teaspoon xawaash, 1 teaspoon berbere- stir until looks like paste consistency. 

Lire baking dish with parchment paper. Arrange tilapia on sheet. using a brush coat tilapia on both side with the paste 

bake in over @ 350 for 30 minutes. the broil on high for 5 minutes 

 sauce for fish 

saute onion 1/4 pepper in saucepan with oil cook until soft. Add 2 teaspoon xawaash, 1 teaspoon berbere stir for 2 minutes and add tomatoes. In food processor blend eggplant, 1 cup of water until smooth. Add to sauce cook until water from tomatoes are reduced and in liquid . top tilapia with sauce on a plate with rice.
