Doro Watt (Berbere)


Doro Watt (Ethiopian Spicy Berbere Chicken in Sauce)

Serves 4-8

 

4 chicken legs, separated into thighs and drumsticks
1 Tbsp. lemon juice

1 tsp. oil

1 Tbsp. butter

1 onion, diced

4 cloves garlic, minced

½ to 2 Tbsp. of 13’s Berbere Spice Mix (depending on spice preference)

2 cups regular or fire-roasted diced canned tomatoes

¾ cup water or chicken broth

Salt to taste

 

Place chicken in a large glass or ceramic dish and sprinkle with the lemon juice and a bit of salt. Let chicken sit at room temperature for 15-30 minutes. When finished marinating, in a large frying pan, heat oil and butter over medium-high heat. Fry chicken pieces until golden brown on each side. Remove chicken to a plate and set aside. Add the diced onion to the frying pan and cook for 2-3 minutes to soften. Add the garlic and 13’s Berbere Spice Mix and cook for another 1-2 minutes. Add the tomatoes and water/broth; bring to a boil. Transfer the chicken pieces and juices back into the pan. Reduce the heat to medium-low, cover and simmer until the chicken is no longer pink inside (about 35-45 minutes). Season with salt to taste. Serve with rice or injera. ENJOY!
