BBQ Berbere Dinner

In the summer I like to spend as little time as possible by the stove! This recipe is super simple and extremely tasty. I grew up on the basic meat and potatoes diet as most irish families do, so it's still my favourite meal to eat but it is nice to spice things up a bit. Berbere spice is a great option for a spice rub on your BBQ meats and tastes great with sweet potatoes, creating a nice sweet and spicy flavour.

This recipe makes a meal for 2. You may have some spice rub left over for another occasion!

Sweet potato 

Asparagus 

INGREDIENTS

  • Steak 
  • 2 Sweet potatoes
  • Large handful of Asparagus
  • 1 tsp tsp Salt 
  • 1 tsp Pepper
  • 2 tbsp Berbere spice 
  • 1 tsp Garlic
  • 1 tsp oil


Instructions

  1. If you are using steak as your BBQ meat, take it out of the fridge at least a half an hour before you cook it to get it to room temperature. I like to mix the salt, pepper, garlic and Berbere spice together in a little bowl and then mix it up (set some aside for your potatoes). Add the rub to the piece of steak on both sides and let it marinate until it's ready to be cooked (see below for timing on your steak).
  1. Next peel and cube your sweet potatoes into approximately 1 inch cubes. Boil the potatoes until they are soft but not crumbling (you should be able to stab your fork in the potato without it falling apart). 
  1. Toss the potatoes in some oil and the Berbere spice rub mix.you can either roast the potatoes in the oven or put them in some tin foil and cook them on the BBQ. The potatoes will take slightly longer than the steak so start cooking those right away. 
  1. This meal I used asparagus without spice rub and went for oil, garlic, salt and pepper but the Berbere season does taste great with green as well. The asparagus cook fairly quickly and can be added to the BBQ. Once they are added you can also add your steaks 
  2. COOKING STEAKS: 

Place the steaks on the grill and cook until golden brown and slightly charred, 4 to 5 minutes. Turn the steaks over and continue to grill 3 to 5 minutes for medium-rare (an internal temperature of 135 degrees F), 5 to 7 minutes for medium (140 degrees F) or 8 to 10 minutes for medium-well (150 degrees F).


  1. Continue to watch your sweet potatoes and flip as needed.

COOKING STEAKS: 


Place the steaks on the grill and cook until golden brown and slightly charred, 4 to 5 minutes. Turn the steaks over and continue to grill 3 to 5 minutes for medium-rare (an internal temperature of 135 degrees F), 5 to 7 minutes for medium (140 degrees F) or 8 to 10 minutes for medium-well (150 degrees F).
