This recipe is one that I used to frequently make when I was trying to lose weight. It helped me lose weight, be healthy while still being able to eat things I liked. I used to hate vegetables and now I love them. I’m sharing this recipe in hopes of inspiring people that are like me to try out vegetables in a new way.
This recipe reminds me of the first food that I ate when I came to Canada for the first time. It was so good ! That is the reason why I want it to share with people, my favorite dish, with a new special ingredient.
Back in the day my grandma always used to cook macaroni for me, so I thought it’d be inspirational for me to come up with a similar recipe but with a little change to it to include the berbere spice, so that’s when it came to me to make a skillet cheesy beef and veggie macaroni.
Usually when my parents are at work I have to cook for my little brothers. Obviously, not being a professional, the first idea that comes to mind is to make pasta. One day while making my usual recipe, I had the idea of adding peanut butter. Surprisingly, my little brothers loved it ! It was a great way to show them that vegetarian food can be delicious without it being a salad :)
