This is the perfect fall harvest soup. We also know that as the second wave of Covid-19 is hitting we may be looking for ways to stay inside and avoid the stores. This recipe makes quite a large batch and you will definitely be able to freeze some. Also as the weather cools a nice warm bowl of soup helps to heat the soul.
This recipe is easy to prepare, it doesn't take much time to cook and it's really delicious. Callaloo is similar to spinach and actually comes from the same plant family. It is a staple in many Caribbean and African diets. You can find callaloo at most African grocery stores, or you can replace it with spinach or even kale. If you havent tried it, I suggest trying to find the callaloo simply because its fun to try something new and you may find some other new foods to try if you check out a new store.
We used this recipe, paired with our yogurt dips, as an easy way to show case our spices to the Dragons Den producers. We had to make something quickly in the morning before our auditions and these took max 10 minutes!! You can also make the chips a day in advance and they are good to go the next day.
