Xawaash Chickpea Fried Dumpling

This recipe is something like an Asian Bao but with a Guyanese, Caribbean twist.

Preparation time: 30 minutes

Cooking time: 30 minutes

Serves 6-10 persons

 

Ingredients Dough

1 1|2 cups all purpose flour

1 tsp. baking powder

1/3 cup sugar

4 tbsp. butter

pinch of salt

about 1 cup water*

 

Filling

2 tbsp. oil

½ cup of chickpeas

2 heads of green onions (finely chopped)

1 yellow onion (finely chopped) 

2 tbsp. Xawaash spice

 

Utensils needed

1 large bowl

1 large pan

1 paper towel 

 

Cooking time!

Dough Instructions

  1. Mix flour, baking powder, salt and sugar together in a bowl.  (Add 1 cup of flour and add as needed after adding water -(see video for how the dough should look)
  2. Gradually add water and mix until firm.  Firm, not stiff.
  3.  Let dough sit, covered for 15 mins.
  4.  Pinch off golf size amount of dough and roll into small ball
  5. Let sit for another 5 mins
  6. Roll balls into 4-5 inch circles and add 1 tbsp. of chickpeas to center and close by pinching together with finger tips.
  7.  Heat about 3 inches of oil on a medium fire.  Fry dough until golden brown, flipping once.   Best when served hot.

Chickpeas Instructions

  • Add 4 cups of water to a pot and bring to a boil
  • Add 1 tbsp. salt (optional)
  • Add washed chickpeas and allow to boil for about 15 mins or until soft but not mushy
  • Drain chickpeas
  • Add 2 tbsp. oil to a heated pan
  • Add diced onion and sit for 1 and a half to 2 mins
  • Add chickpeas 
  • Add chopped green onions and stir
  • Add 2 tbsp. Xawaash spice (you may want to add more depending on your taste buds)
  • Let it sit  on low heat for 3 mins
  • Remove and add to fridge or freezer for 10 mins to cool - Check on it and mix chickpeas periodically to ensure coldness goes throughough

    Frying Instructions (This can be done in oil or in air fryer)

  • Add 1 cup of oil to pan and let it heat on medium 
  • Place dough filled with chickpeas into oil and cook on each side for 3 mins or until desired color is achieved (golden brown or brown)
  • Remove and set on paper towel to absorb excess oil
  • Enjoy!
